  1. Heat 1 tablespoon of oil in a skillet over medium-high heat. Add the sweet potatoes and cook, stirring occasionally, for 10 minutes. Add the poblano peppers, cumin, and a pinch of salt, and continue to cook for an additional 10 minutes, or until the potatoes and peppers are tender.
