- Preheat oven to 350. In large skillet, heat olive oil over medium heat. Saute mushrooms and onion over medium heat and add ground beef (or turkey). Add tomatoes and cook until tender. Place bell pepper halves in an oven safe pan. Spoon mixture into peppers. Cover and bake for 25 minutes or until bell peppers are soft. Serves 2-3.
