Directions

  1. Bring a large pot of salted water to a boil. Add the peeled and diced butternut squash and cook until soft, about 5-6 minutes.
  2. Remove the squash with a slotted spoon and blend until smooth.
  3. Add the pasta to the boiling water and cook according to package directions for al dente, reserving 1 cup of the pasta water before draining.
  4. In a large deep non-stick skillet, melt the butter. Sauté the leek whites and garlic over medium-low heat until soft and golden, about 5-6 minutes.
  5. Add the pureed butternut squash, season with salt and pepper to taste, and add a little reserved pasta water to achieve the desired consistency.
  6. Stir in the Parmesan cheese and sliced sage leaves, then mix in the pasta until well coated.
