Directions

  1. Heat the olive oil in a pan over medium heat. Add the minced garlic and finely chopped onion, sautéing until the onion is slightly browned, about 5 minutes.
  2. Transfer the chicken breast, fire-roasted tomatoes, sautéed onion and garlic, spices, chicken stock, and salt into a pre-heated slow cooker.
  3. Cover and cook on high for 2-3 hours.
  4. Shred the chicken breast using two forks.
