- Lightly sear the chicken breast in a pan deep enough to hold 2-3 cups of liquid. After searing, add the taco seasoning and chicken broth. Cover and let simmer on medium-low heat for 20 minutes.
- In a medium saucepan, heat the queso fresco on very low heat until melted. Start this process 5 minutes before the chicken is done simmering.
- Shred the chicken with two forks. If the chicken has absorbed most of the liquid, drain any excess into a cup to use for flavoring leftover chicken.
- Place the tortilla chips on a baking sheet, top with shredded chicken, and pour the melted queso over the nachos. Broil in the oven for 2-3 minutes. Top with chopped green onions and serve.
