  1. Melt knob of butter in frying pan on medium.
  2. Cut ciabbata in half and butter. Place face down in medium to hot skillet and toast.
  3. Beat eggs and pour into frying pan.
  4. Stir eggs occasionally, allowing time to solidify a little but not long enough to become dry. Tilt pan to spread out liquid eggs if required.
  5. Plate up toast. Top with cooked eggs. A pinch of salt and pepper and some chives to finish.
