- Preheat the oven to 450°F. On a large rimmed baking sheet, toss fennel wedges and garlic with 1 tablespoon of olive oil. Season with salt and pepper, then roast for 10 minutes.
- In a bowl, mix fennel seed, coriander, and lemon zest. Season with salt and pepper. Rub the chicken with 1 tablespoon of olive oil, then coat with the spice mixture.
