- Preheat the oven to 400°F.
- Spread the squash, apple, red pepper, onion, and half of the diced bacon on a large roasting pan. Drizzle with olive oil, salt, and pepper, and toss to coat evenly. Bake for 1 hour.
- In a large pot over high heat, combine the roasted vegetables and bacon with sage, garlic, chicken broth, and white wine. Cook for 10-15 minutes, breaking up the vegetables with a spoon.
- In a skillet over high heat, cook the remaining bacon until crisp.
