  1. Chop chicken into bite-sized pieces.
  2. Heat a large skillet over medium heat and add olive oil. Add chicken pieces and sauté for 5 minutes, stirring to ensure even cooking.
  3. Add sliced mushrooms and cook for an additional 5 minutes until the liquid from the mushrooms has almost evaporated. Stir in zucchini and squash and cook for 2 more minutes.
  4. Stir in the rinsed quinoa, chicken stock, black pepper, salt, garlic powder, oregano, and basil. Cover the skillet, reduce heat to low-medium, and cook for 15-20 minutes.
  5. Remove from heat, stir in lemon juice and freshly chopped parsley, and serve immediately.
