  1. Slice mushrooms and dice bell pepper.
  2. Heat olive oil in a skillet over medium heat and sauté mushrooms and bell pepper until softened. Set aside.
  3. Meanwhile, in a bowl, whisk together egg whites and whole egg until light and frothy.
  4. Spray the skillet with cooking spray.
  5. Pour the egg mixture into the skillet and cook over medium heat.
