  1. poach eggs until runny in middle (If no egg poach equipment available, cook eggs in shell for 5 minutes sharp and peel, that will make them runny)
  2. remove eggs from water while keeping about a cup of water. Add the spinach in the pot with the remaining water and let simmer for 3 minutes, then drain.
  3. insert the bread in the toaster while spinach is cooking
  4. peel eggs in the meantime if cooked without poaching equipment
  5. add ham on bread, layer with a bit of spinach, add a poached egg on top, and add a little bit of light mayonnaise over the top for flavour, lightly salt the egg
