  1. slice the chicken breast thin.
  2. combine the soy sauce, sugar, oyster sauce, fish sauce and second sugar amount in a small bowl instead of side.
  3. heat 2/3 of the oil on high in a large skillet for about a minute when you first see the smoke add the chicken and garlic to the pan and saute for 1 minute or until the exterior is mostly seared. scrape bits off the pan as needed.

  7. when the chicken is cooked through and the noodles have absorbed the sauces, sprinkle with white pepper and combine well.
