- Heat one-third of the olive oil in a non-stick 12-inch sauté pan or deep skillet over medium-high heat.
- Add diced chicken to the pan and season with salt, pepper, half of the cumin, half of the coriander, and half of the cinnamon. Cook, turning occasionally, until cooked through, about 7 minutes. Transfer chicken to a sheet of foil and wrap to keep warm.
- Heat remaining olive oil in the skillet. Add bell pepper and onion, and sauté for 5 minutes.
- Add matchstick carrots, garlic, remaining cumin, coriander, cinnamon, and turmeric. Sauté for 1 minute.
- Add chicken broth and golden raisins, season with salt and pepper to taste, and bring to a boil.
- Stir in couscous, then remove from heat and let rest for 5-6 minutes until tender.
- Stir in chicken and any accumulated juices, lemon juice, almonds, cilantro, and mint. Serve warm.
