- Preheat oven to 425 degrees F.
- Bake potatoes for 45-60 minutes until soft.
- While potatoes are baking, chop broccoli and dice tomato.
- Bring a pot of water to boil and place steamer tray just over water. Steam broccoli, covered, for 5-6 minutes until tender and bright green. Remove steamer tray from pan, rinse broccoli with cold water, and set aside.
- When potatoes are baked through make a cut lengthwise in them and stuff with cooked broccoli, black beans and diced tomatoes. Pour salsa verde over the whole thing. Enjoy!
