  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine the egg whites, butter, maple syrup, and skim milk, mixing well. In a separate bowl, mix the flour, wheat germ, oat bran, protein powder, baking powder, and baking soda. Combine the dry and wet ingredients, stirring only until the dry ingredients are moistened. Gently fold in the walnuts.
  3. Lightly coat a nonstick muffin pan with cooking spray. Fill each cup 3/4 full with the mixture. Bake for 20-25 minutes, or until toasty brown and a toothpick inserted into the center comes out clean. Allow to cool for a few minutes before removing from the pan.
