Directions

  1. Slice onion and bell pepper.
  2. Gently beat the eggs and 1/2 of the olive oil in a bowl
  3. Heat a nonstick skillet, over medium heat. Cook egg mixture (splitting and repeating if making more than 1 serving) until set. Set aside.
  4. Heat rest of olive oil saute vegetables until softened. Set aside.
  5. Season the beef with salt and pepper and saute over medium high heat until cooked through. Add veggies to the meat.
  6. Fill the omelets by layering provolone with meat and vegetables.
  7. Fold omelets over and place back in the skillet on medium and cover to melt the cheese.
