Directions

  1. Season the pork with salt and pepper.
  2. Heat a large pot or Dutch oven over medium-high heat, add olive oil and garlic, and sauté until golden brown, about 1 to 1 1/2 minutes. Remove the garlic with a slotted spoon.
  3. Add the pork to the pot and brown it for about 2 minutes on each side. Return the garlic to the pot along with the remaining ingredients, reserving half of the parsley.
  4. Bring to a boil, then cover and cook on low until the pork is tender and shreds easily, about 2 hours.
  5. While the sauce is finishing, cook the pasta according to the package directions.
  6. Remove the bay leaves and shred the pork with two forks.
  7. Serve pork ragu over pasta, garnished with remaining parsley.
