  1. Over medium heat, add 2 Tbsp. ghee to pan, saute onion, garlic, and chili until onion begins to look translucent
  2. Turn heat to low, add turmeric, garam masala, ginger, coriander and cumin. Cook until fragrant, about 5 minutes
  3. Add the tomato puree, salt and pepper and cook another 2 minutes
  4. Add the coconut cream and bring curry up to a simmer. Simmer 10 minutes.
  5. While sauce is simmering, place 1 Tbsp.ghee to a frying pan over medium heat. When ghee is hot added the boiled eggs and gently fry until the outside are brown and crisp
  6. Add the eggs to the curry sauce along with the green beans and simmer 5-8 minutes
  7. **can be served over cauliflower rice** just configure additional carbs
