- Over medium heat, add 2 Tbsp. ghee to pan, saute onion, garlic, and chili until onion begins to look translucent
- Turn heat to low, add turmeric, garam masala, ginger, coriander and cumin. Cook until fragrant, about 5 minutes
- Add the tomato puree, salt and pepper and cook another 2 minutes
- Add the coconut cream and bring curry up to a simmer. Simmer 10 minutes.
- While sauce is simmering, place 1 Tbsp.ghee to a frying pan over medium heat. When ghee is hot added the boiled eggs and gently fry until the outside are brown and crisp
- Add the eggs to the curry sauce along with the green beans and simmer 5-8 minutes
