Directions
- Chop onions and cilantro.
- Place beef, onion, cilantro, salt, and chili powder together in a big bowl. Mix thoroughly with your hands.
- Heat a pan on medium-high until it gets hot. You shouldn’t need to add any oil.
- Put the meat in the pan. Let meat brown on the bottom, without touching it, for 3 minutes.
- Break up with a wooden spoon and continue to let it cook, stirring occasionally (until all the pink is gone).
- Heat a non-stick pan over medium heat with a bit of butter.
- Whisk 2-3 eggs together and pour into the pan. Rotate pan so the eggs cover the bottom. Cook in the pan until firm. Remove onto a plate. Top half with the beef and fold omelet over onto it self.
- Serve and enjoy!
