Directions

  1. Preheat oven to 350 and line a rimmed baking sheet with parchment paper, or spray with canola oil.
  2. Pour half of the tomato sauce into a 9x13 glass baking dish and spread in a thin layer to cover the bottom. Set aside.
  3. In a large glass bowl, add ground turkey, eggs, 1 1/4 cup parmesan cheese, oregano, basil, parsley, garlic, onion powder, salt and pepper. Thoroughly combine mixture with your hands and divide into 24 equal-sized portions.
  4. Gently roll each portion into a ball and place on prepared baking sheet, leaving room between each meatball. Place baking sheet in pre-heated oven and bake for 15-20 minutes.
  5. Remove from oven and transfer meatballs to prepared baking dish. Spoon remaining sauce over meatballs and sprinkle with remaining 1/4 cup parmesan cheese.
  6. Place baking dish in oven for about 10 minutes, or until sauce and meatballs are heated through. Remove from oven and serve immediately.
  7. Garnish with fresh parsley.
