Directions
- Cook the rice according to package instructions.
- Cut the chicken into chunks and chop the broccoli into bite-sized pieces.
- In a large sealable bag, coat the chicken pieces with two-thirds of the cornstarch. Set aside.
- Mix the sugar, soy sauce, rice vinegar, chicken broth, and remaining cornstarch in a bowl. Set aside.
- Add water to a large skillet over medium-high heat. Cook the broccoli covered until bright green, about 4 minutes. Drain and set aside.
- Heat the oil in the same skillet over medium-high heat. Sauté the garlic until fragrant, about 30 seconds. Add the chicken, shaking off excess cornstarch, and stir-fry until browned.
- Pour in the sauce mixture and cook for 3 minutes. Add the broccoli, snow peas, corn, and water chestnuts. Stir until the sauce thickens and everything is cooked through, about 5 minutes. Serve over rice.
