Directions

  1. Warm butter on low 30% heat.
  2. Meanwhile, chop vegetables.
  3. Add vegetables and olive oil. Raise heat to 60%.
  4. Add desired seasonings. (I use some sea salt, basil, garlic powder and red neck pepper.)
  5. Stir to coat the vegetables and leave to cook a bit.
  6. Crack 8 eggs into separate container.
  7. Stir the veggies and, after about 5-7 minutes, they should become fragrant and the onion should appear slightly translucent. Then, add the eggs.
  8. At this point, continue to stir until eggs are cooked as desired.
  9. You're done! You can make a low carb wrap or eat it out of a bowl. Add a bit of sour cream or yogurt or picked toppings, whatever you like.
