Directions

  1. Place edamame and the corn in a strainer. Run hot water over them to thaw.
  2. In a large bowl combine the edamame, corn, quinoa, green onion, red pepper, and cilantro.
  3. In a small bowl whisk together the olive oil, lemon juice, lime juice, salt, chili powder, black pepper, thyme and cayenne until will combined.
  4. Drizzle over the salad and toss to coat.
  5. Cover and chill for at least 2 hours.
