Ingredients

Directions
- Heat olive oil in a deep, lidded frying pan or casserole dish over medium heat.
- Slice the red onion and saute for 3-4 minutes until softened.
- Add minced garlic and ginger and cook for another minute. De-seed and slice the green chili and add to the pan along with the garam masala, turmeric and a pinch crushed red pepper flakes.
- Rinse the green lentils until the water runs clear, then add to the pan. Add coconut milk, vegetable broth, and season generously with salt and pepper.
- Bring to a boil, then reduce to a gentle simmer. Cover and cook for 30 minutes, stirring regularly to prevent the lentils from sticking. Remove the lid and cook 15-20 minutes until the lentils are cooked through and the dahl is thick.
- Roughly chop the spinach and stir in the final minute of cooking.
- Stir in the juice and zest of the lemon and serve.
