  1. Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness. Season both sides with salt and pepper.
  2. Melt the coconut oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side until browned. Remove and set aside.
  3. In the same skillet, sauté the onion until softened. Add the chopped chili pepper and sauté for another couple of minutes.
  4. Add the chicken broth, lime juice, fresh chopped cilantro, and red pepper flakes. Bring to a boil, then reduce to a simmer for about 5 minutes. Stir in the coconut milk and bring to a simmer again for another 5 minutes.
  5. Return the chicken to the skillet, cover, and cook for another 5-10 minutes until fully cooked.
  6. Serve warm.
