  1. Preheat oven to 400°F. Rinse the chicken in water and pat dry with paper towels. Coat the bottom of a roasting pan with olive oil.
  2. Rub olive oil over all chicken pieces in the pan. Sprinkle both sides with salt and freshly ground black pepper. Arrange pieces skin-side up, ensuring they are not crowded.
  3. Bake for 30 minutes at 400°F, then reduce heat to 350°F and continue baking for 10-30 minutes more, until juices run clear when poked with a sharp knife. For more browning, broil for the last 5 minutes.
  4. Remove from oven, transfer chicken to a plate, tent with foil, and let rest for 5-10 minutes.
  5. For gravy, place the roasting pan on the stove over medium heat. Scrape drippings and add chicken broth to deglaze. Pour mixture into a saucepan and reduce to desired thickness.
