- Cook the rice according to package instructions and set aside.
- Dice the onion.
- Heat half of the olive oil in a pan over medium heat. Add the diced onion and stir frequently until soft and translucent.
- Finely chop the cabbage and cut the carrot into matchsticks.
- Add the cabbage, carrot, and a dash of salt to the pan. Cover and cook for 10 minutes.
- Butterfly the chicken breasts and slice into small strips.
- Remove the vegetable mixture from the pan and set aside.
- Increase the heat to medium-high, add the remaining olive oil, and sauté the chicken strips for 5 minutes until cooked through to 165°F.
- Return the vegetables to the pan, reduce the heat to low, and stir in the soy sauce and oyster sauce.
- Serve the stir-fry with the prepared rice. Enjoy!
