• Tomatoes

  Red, ripe, raw, year round average

  4 medium whole or 492g

• Onions

  Raw

  1 medium or 110g

• Green bell pepper

  Sweet, green, raw

  1 medium or 119g

• Garlic

  Raw

  3 clove or 9g

• Corn, Golden Sweet, Whole Kernel

  Golden Sweet, Whole Kernel, Spartan

  2 cup or 500g

• Vegetable oil

  Natreon canola, high stability, non trans, high oleic (70%)

  3 tbsp or 42g

• Scallions

  Spring onions or scallions (includes tops and bulb), raw

Directions

1. Slice sausages to taste.
2. In a pan with oil, sauté garlic and onion.
3. Add peppers, tomatoes, salt, and scallions.
4. Mix well and boil for 5 minutes.
5. Add tomato sauce, corn, and sliced sausages.
6. Cook for 10 minutes and serve in buns.
7. Add potato chip crumbs (original flavored Ruffles or similar), if desired.
