  1. Peel and grate the ginger, mince the garlic, chop the serrano pepper, and slice the mango.
  2. Cook the rice according to the package instructions and set aside.
  3. Combine the chicken with oyster sauce and soy sauce in a bowl and marinate for 10 minutes.
  4. Heat a large skillet or wok over medium heat. Add 1 tablespoon of sesame oil, then the garlic, ginger, and serrano pepper. Cook for 30 seconds until fragrant, being careful not to burn the garlic.
  5. Increase the heat to medium-high, add another drizzle of sesame oil, and the marinated chicken. Stir-fry until cooked through, about 5-7 minutes.
