Directions
- Cut the goat cheese into 1-ounce cubes.
- Halve the pears lengthwise and remove the cores.
- Preheat the oven to 400°F.
- Melt the butter in an 8-inch square glass baking dish in the middle of the oven, about 3 minutes.
- Arrange the pears, cut sides down, in one layer in the butter and roast in the middle of the oven until tender, about 20 minutes.
- Pour the vinegar over the pears and roast for 5 more minutes.
- Transfer the pears, cut sides down, to serving plates with cheese and spoon some of the juices from the baking dish over the pears. Drizzle with honey and sprinkle with pepper.
