Ingredients
- Balsamic vinegar

Directions
- Heat half of the vegetable oil in a nonstick skillet over medium heat.
- In a bowl, whisk together 2/3 of the balsamic vinegar, Dijon mustard, and minced garlic.
- Add the chicken breasts to the bowl and coat both sides with the balsamic mixture.
- Transfer the chicken and marinade to the hot skillet. Sauté for about 3 minutes per side, or until cooked through. Transfer the chicken to a plate and keep warm.
- Add the remaining teaspoon of oil to the skillet. Sauté the mushrooms for about a minute.
- Pour in the chicken broth, thyme, and remaining balsamic vinegar. Cook, stirring frequently, until the mushrooms are deep brown and the sauce has thickened slightly, about 2 minutes longer.
- Serve the chicken topped with the mushroom sauce. Enjoy!
