  1. Crumble tofu, dice mushrooms, and grate Parmesan cheese.
  2. Bring a pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  3. Preheat oven to 400°F.
  4. In a medium bowl, combine tomato sauce, mushrooms, and tofu. Stir in cooked pasta. In a separate, small bowl, combine mozzarella and Parmesan cheeses.
  5. In a small casserole dish, layer pasta mixture and cheeses.
