- Preheat the oven to 450°F.
- Cut the chicken into pieces for the number of servings being prepared and pound each piece until thin for quick cooking.
- In a shallow bowl, combine breadcrumbs with one-third of the Parmesan cheese and set aside.
- Chop the spinach and sauté with garlic and a drizzle of olive oil over medium heat for 2-3 minutes until wilted. Mix with ricotta, remaining Parmesan, and about one-eighth of the beaten egg whites.
- Place the remaining egg whites in another shallow bowl.
- Place a spoonful of filling on each piece of chicken, roll up, dip in egg whites, then breadcrumbs. Place seam-side down in a baking dish. Repeat for all pieces.
- Bake the chicken for 25 minutes until cooked through and browned. Top with marinara sauce and Mozzarella slices and bake for another 3-5 minutes until the cheese melts. Garnish with freshly chopped basil.
