  1. In a large mixing bowl, combine ground beef, chorizo, egg, minced garlic, uncooked rice, chopped mint leaves, breadcrumbs, salt, pepper, and half of the cumin. Mix gently with your hands until just combined, avoiding overworking the meat.
  2. Shape the mixture into small meatballs (about 24 for the original 6-serving recipe) and set aside.
  3. Heat a large Dutch oven or pot over medium-high heat. Add olive oil, celery, carrots, onions, and a pinch of salt. Sauté for about 8 minutes until the onions are softened.
  4. Add beef broth, cilantro, tomato paste, oregano, and remaining cumin. Stir until the tomato paste is fully dissolved. Season with salt and pepper to taste.
  5. Bring the broth to a boil, then reduce heat and simmer uncovered for 10 minutes.
  6. While the broth is simmering, gently drop the meatballs into the pot. Return the soup to a simmer, cover, and cook for 10 more minutes.
