  1. Chop the potatoes and onions. Place the potatoes in a large saucepan with about ¾ cup of water. Cook on medium heat with the lid on until the potatoes are soft and the water has evaporated. Add more water if needed.
  2. Once the potatoes are soft, add olive oil and chopped onions. Cook until onions are golden brown. Reduce heat, add spinach, and cook until wilted. Season with salt and curry powder. Let the filling cool before using.
  3. Preheat the oven to 400°F.
  4. Set up your workstation with the wrappers, a bowl of water, the filling, olive oil for brushing, sesame seeds, and a baking sheet.
  5. Place a small amount of filling in the center of a wrapper. Fold in half to form a triangle and seal with water.
  6. Brush the samosas with olive oil, sprinkle with sesame seeds, and bake for 15-20 minutes until golden and crispy.
