- Chop the potatoes and onions. Place the potatoes in a large saucepan with about ¾ cup of water. Cook on medium heat with the lid on until the potatoes are soft and the water has evaporated. Add more water if needed.
- Once the potatoes are soft, add olive oil and chopped onions. Cook until onions are golden brown. Reduce heat, add spinach, and cook until wilted. Season with salt and curry powder. Let the filling cool before using.
