  1. In a food processor, blend: Cilantro, thyme, scallions, garlic, ginger, together with rice vinegar (and water as needed) to make a paste.
  2. Toss cut up chicken with the paste, marinate at least 30 minutes to overnight.
  3. Heat the oil in a large pot or large deep sided skillet on medium heat. Add sugar and cook down to a syrup
  4. add the chicken pieces and stir to coat well. Brown the chicken. Add the onion (if using).
  5. Cover and let cook for 2-3 minutes
  6. Add chicken broth, coconut milk, red pepper flakes. Add vegetables at this point for softer vegetables or later for crunchier vegetables.
  7. Cover and cook over medium heat for 5 - 7 minutes.
  8. Stir in ketchup and butter. Cover and cook 5 minutes
  9. For crispier vegetables, add to pot at this time, cover and cook 10-15 more minutes.
