Directions
- In a food processor, blend: Cilantro, thyme, scallions, garlic, ginger, together with rice vinegar (and water as needed) to make a paste.
- Toss cut up chicken with the paste, marinate at least 30 minutes to overnight.
- Heat the oil in a large pot or large deep sided skillet on medium heat. Add sugar and cook down to a syrup
- add the chicken pieces and stir to coat well. Brown the chicken. Add the onion (if using).
- Cover and let cook for 2-3 minutes
- Add chicken broth, coconut milk, red pepper flakes. Add vegetables at this point for softer vegetables or later for crunchier vegetables.
- Cover and cook over medium heat for 5 - 7 minutes.
- Stir in ketchup and butter. Cover and cook 5 minutes
- For crispier vegetables, add to pot at this time, cover and cook 10-15 more minutes.
