Directions

  1. Mix garlic powder, onion powder, cayenne, pepper, and cumin together. Dice the chicken and coat with half to a third of the spice mix.
  2. Dice the onions and jalapenos, then mix with minced garlic and salt.
  3. Heat oil in a pan and fry the chicken in batches until browned, about 4-6 minutes per batch. Transfer to slow cooker.
  4. In the same pan, fry the vegetables for 6-8 minutes, stirring occasionally. Transfer to slow cooker.
  5. Drain the beans and add to the slow cooker. Add chicken broth, remaining spice mix, and enough water to cover. Stir well and cover.
  6. Cook on low for 8-10 hours or on high for just over 5 hours, until the chicken is tender and falls apart.
