- Transfer the pepper and onion mixture to a plate.
- Return the skillet to the heat and add the remaining olive oil.
- Add the chicken strips in a single layer and cook until browned and cooked through, about 6 minutes.
- Return the pepper mixture to the skillet and add the lime juice. Heat until everything is sizzling.
- Garnish with remaining cilantro and serve immediately.
