  1. Preheat the waffle maker.
  2. Process the cauliflower in a food processor until it resembles rice-sized pieces, or use a hand grater.
  3. In a large bowl, mix the riced cauliflower, mozzarella, parmesan, eggs, garlic powder, onion powder, pepper, chives, parsley, and sun-dried tomatoes until well combined.
  4. Pour scant ¼ cup portions of the batter onto the hot waffle maker.
  5. Cook for 4-6 minutes, checking after 4 minutes. If the waffle sticks, cook longer.
  6. Remove the cooked waffle and let it cool on a plate.
  7. Refrigerate any remaining batter.
