- Thaw spinach. Whizz in a food processor with the coriander until smooth. Set aside.
- Cut potatoes into quarters. Parboil the potatoes until tender. Drain and set aside once the potatoes are partially cooked.
- Toast tumeric and ground cumin in a warm pan for a minute or two before adding the onion, garlic. Saute the onions until soft.
- Add the potatoes to the pan and coat in the spices, then add the spinach and allow to cook for 10 minutes until all the flavours have developed.
- Remove from heat and stir in the hummus, then season with additional salt and pepper if needed. Enjoy!
