  1. Thaw spinach. Whizz in a food processor with the coriander until smooth. Set aside.
  2. Cut potatoes into quarters. Parboil the potatoes until tender. Drain and set aside once the potatoes are partially cooked.
  3. Toast tumeric and ground cumin in a warm pan for a minute or two before adding the onion, garlic. Saute the onions until soft.
  4. Add the potatoes to the pan and coat in the spices, then add the spinach and allow to cook for 10 minutes until all the flavours have developed.
  5. Remove from heat and stir in the hummus, then season with additional salt and pepper if needed. Enjoy!
