  1. Slice the shiitake and cremini mushrooms. Press the garlic clove without any juice running out. Finely chop the thyme.
  2. Bring 2 cups salted water to boil in a medium saucepan. Add quinoa, reduce heat to medium-low, cover, and simmer until tender and water is absorbed, about 13 minutes.
  3. Meanwhile, heat oil in a large skillet over medium-high heat. Add onion and sauté until onion begins to brown, about 5 minutes. Add garlic; stir for 30 seconds. Add mushrooms and thyme. Sauté until mushrooms are tender, about 6 minutes. Add wine; stir until wine is reduced and liquid is syrupy, about 2 minutes.
  4. Mix quinoa into mushroom mixture; season with salt and pepper. Pass cheese separately.
