Directions
- Prepare quinoa as per package directions. Allow to cool completely.
- Preheat oven to 350°F. Line a 9x9 inch brownie pan with parchment paper and lightly grease with butter or baking spray.
- In a large bowl, combine rolled oats, cooked quinoa, sugar, quinoa flour, salt, dates, and cashews.
- In a smaller bowl, mix vanilla extract, melted butter, maple syrup, brown rice syrup, water, and almond butter.
- Combine wet ingredients with dry ingredients until evenly mixed. Pour into the prepared pan, pressing down firmly with plastic wrap for an even layer.
- Bake for 30-35 minutes, until edges are browned. Allow to cool completely before cutting. For easier cutting, chill in the fridge.
