Directions
- Scrape out the gills from the underside of the mushroom cap. Cut into 1-inch pieces and transfer to a food processor with shallot and parsley; pulse until chopped.
- Transfer mushroom mixture to a bowl. Add turkey, olive oil, Worcestershire sauce, salt, and pepper; mix gently. Form into 4 patties, refrigerate until firm (~30 minutes).
- Preheat grill to medium, brush grates with olive oil. Grill patties until cooked through, adding cheese in the last 3 minutes. Cover with a disposable pan to melt cheese.
- Toast English muffins on the grill, spread with mustard and mayonnaise. Serve patties on muffins, topped with avocado.
