  1. In a small bowl, whisk together the peanut butter, soy sauce, lime juice, brown sugar, one-third of the chili garlic sauce, and one-fourth of the ginger. Add water gradually to achieve the desired sauce consistency. Set aside.
  2. Heat the vegetable oil and sesame oil in a large skillet over medium-high heat. Add the ground chicken, mushrooms, carrot, and shallot. Cook for 5-7 minutes, crumbling the chicken as it cooks, until browned. Drain any excess fat.
  3. Add the garlic and remaining ginger to the skillet and cook until fragrant, about 1 minute.
  4. Stir in the hoisin sauce, remaining chili garlic sauce, and fish sauce. Cook until heated through, about 30 seconds. Remove from heat and stir in cilantro.
  5. Serve the chicken mixture in the center of lettuce leaves and drizzle with the peanut sauce.
