Directions
- Preheat oven to 400 degrees
- Grease muffin cups or line.
- In a large bowl, mix flours, baking powder, salt, sugar.
- In a medium bowl mix egg, oil, vanilla, peaches, yogurt.
- Stir liquid into dry ingredients until just blended.
- Spoon into muffin cups.
- To make topping, stir together brown sugar, rolled oats, pecans, oil and cinnamon.
- Sprinkle over muffins and pat it onto the top.
- Bake for 15-17 minutes, until a toothpick inserted into the center comes out clean.
- Cool for one minute, then remove from the tin.
