- Heat 1 tablespoon of oil and fry the vegetables on a high flame for 2 minutes. Add some salt and set aside. As an alternative, the vegetables can also be roasted in the oven. Mix the chopped garlic, lemon juice, oil, mint and spices together and also set aside. Bring 300 ml broth to a boil together with 1/2 teaspoon salt and 1/4 teaspoon turmeric. Mix the broth with the couscous and the raisins and let stand covered for 5 minutes. Add the spice mixture and mix well. Finally mix in the vegetables and chickpeas.
