Directions
- Heat half of the olive oil in a saucepan over medium heat. Add ginger and garlic, sauté for 30 seconds, then quickly add soy sauce and water to prevent the garlic from scorching.
- Add honey and red pepper flakes, increase the heat, and simmer for 3 to 4 minutes until the sauce thickens. Remove from heat and set aside.
- Combine beef strips and cornstarch in a zip-top bag or shallow dish, tossing until all beef strips are evenly coated.
- Heat the remaining olive oil in a large frying pan or wok until hot but not smoking. Add beef and stir-fry for 2 minutes until it begins to darken around the edges, stirring occasionally.
- Remove the meat from the pan and clean the pan. Return the pan to the heat, add the meat, and simmer for one minute. Add the sauce and cook for one minute, stirring constantly. Add the scallions and cook for an additional minute.
- Transfer to a plate, leaving excess sauce in the pan, and serve.
