- Tea to be used should be black, strong, and usually inexpensive. The variety used is called mamri. Look for Lipton Yellow Label, Jivraj No.9, or Taj Mahal brands at an Indian grocery, or if you can't find those, use plain black Lipton tea. Bags or loose is fine. 1 tsp or 1 bag per cup.
- You need some fat in the milk for the best flavor from the spices, whole or 2% should also work.
- Sweetener can be sugar or your favorite sweetener. The calories listed are for regular table sugar. Regular sugar is 4.2g carbs/16.3 cal per tsp. Use more or less to taste.

- Pour all ingredients into a small (preferably spouted) saucepan over medium heat.
- Allow to heat until small bubbles appear around the perimeter of the milk. Stir the chai, scraping the bottom to avoid scalding the milk. When the milk comes to a boil, turn off the heat and stir well. Boil once again, turn off the heat and stir well. Allow to steep for a few minutes. Strain carefully into a cup, and serve.
