Directions
- Roughly chop cauliflower florets and process into 'rice' for about 5-10 seconds to yield 2 cups. Microwave on high for 3 minutes until tender.
- Stir hot cream cheese into cauliflower rice until it begins to clump like sticky rice. Season with salt and pepper, then refrigerate for 45 minutes until cool.
- Chop cooked shrimp into four pieces each. Mix with two tablespoons of mayo and one teaspoon of sriracha; set aside.
- Open the avocado, season with salt, and mash; set aside.
- Peel, quarter, and chop the cucumber into small pieces; set aside.
- Layer ingredients in a ramekin: cucumber, avocado, shrimp, cauliflower rice. Press firmly.
