Directions
- This recipe is written assuming one tortilla folded over, but can easily use two tortillas for a larger serving.
- Heat a skillet over medium heat and add the olive oil (or butter, if preferred).
- Place the tortilla in the skillet and sprinkle the shredded cheese evenly over one half of the tortilla. Fold the tortilla in half, pressing down gently with a spatula to help the cheese begin to melt and hold the tortilla together.
- Cook for 2-3 minutes until the bottom is golden and crispy.
- Flip the folded quesadilla and cook the other side for another 2-3 minutes, until the cheese is fully melted and the tortilla is crispy.
- Remove from skillet, let it cool for a minute, then cut into wedges if desired. Enjoy as is, or with a side of salsa or sour cream.
